Blueberry Oatmeal Bread


This is my new recipe for the week. It’s one of the loaves of bread I made using the kefir that had been in my fridge for WAY too long. It’s not a particularly sweet bread, which I like. The recipe calls for white whole wheat flour, which gives it heft and also that background flavor that makes you feel as if you are eating something rather healthy. In this case, I’d say you are. Since the bread is kind of dense, one slice is a perfect serving. I used this recipe from Stonyfield Farm; the only change I made was to add a full cup of sugar as my kefir was VERY tart. The bread did not taste sweet. If you are just using regular plain yogurt, I’d think you’d be fine with the recipe as written.

Would I make it again? Yes, it’s relatively healthy and I prefer it to blueberry muffins, actually, which are sweet and tasty but leave me hungry in a couple of hours.

    1. I’m sorry you guys didn’t love it — it’s definitely not a sweet bread so much. I like that part but recognize it might not be for everyone!

Oh it probably would have been fine if I had added all the sugar that was in the recipe, but I only used 1/4 of the sugar, I think, trying to be healthy and thinking that between the applesauce (unsweetened but still!) that I used instead of the oil and the blueberries, it would taste sweet enough. But no, that didn’t work, lol!

  1. I have some incredibly tart (let it sit too long) kefir that I need to use. This sounds like a great Saturday morning quick bread. It is 4:22 and I can’t sleep. Maybe I should just bake!
