Food Lately: Mid-June

It’s been a while since I’ve posted what we’ve actually eaten, as opposed to what I plan. Today I’ve got a variety of photos from the last couple of weeks AND I’ve written down a general plan for this week as well. I want to get back on track posting these as they are helpful to me as far as remembering what we’ve eaten and enjoyed and what we haven’t had for a while and so on.

Clockwise from top left:

  • Baba ganoush and whole wheat pita bread (my pita didn’t create a pocket, which was irritating but still yummy)
  • Black bean and beef taco salad — this was mostly spinach, actually, although it’s hard to tell from the photo.
  • Chicken with peppers, olives and capers — a favorite. Simple, healthy and delicious.
  • Greek salad pasta, roasted asparagus — basically pasta alla puttanesca with artichoke hearts and feta added

Clockwise from top left:

  • Broiled salmon with fig and caramelized onion sauce, sauteed kale, tomato and cucumber salad — another family favorite, which I only make when figs are reasonably priced and actually available. Really tasty with the kale.
  • Cheese enchiladas — these look terrible but tasted delicious. My filling is always a mash-up of what we have lying around, but generally there is cream cheese, cheddar cheese, black beans, bell peppers, and green olives. If I can ever take an attractive photo of them I will write up the recipe because it is really, really yummy.
  • Cheese omelette with sauteed mushroom, leftover sauteed kale — I really love kale. And it goes so well with eggs and mushrooms.
  • Mujadarrah (lentils and rice w/caramelized onions), tomato cucumber salad, hard boiled egg — simple and so, so, so good.

This week’s meal plan:

  • Veggie Egg Bake, greens
  • Chicken Picadillo Empanadas, cilantro slaw, melon
  • Baba ganoush, hummus, pita bread, Greek salad
  • Teriyaki pork chops, snap peas, sesame noodles
  • Balsamic chicken breast, roasted potatoes, carrot salad
